Shrimp Salad Recipe

This pasta and shrimp salad recipe adds a Greek flare by including feta cheese & black olives. Love it!

Add crusty bread with this salad, and you are set to go.

8 oz. frozen, cooked, peeled and deveined shrimp
1 1/3 cup dry corkscrew pasta or any medium-sized pasta shell.
1 cup fresh spinach, shredded
1/2 cup (2 oz.) feta cheese, crumbled
2 T. pitted black olives, sliced
4 cherry tomatoes, quartered

1. Thaw shrimp by placing in colander & running cold water over shrimp. Drain and set aside.
2. Cook pasta according to package directions. Drain & set aside.
3. Mix dressing ingredients together & shake well:
1/4 cup olive oil
1/4 cup wine vinegar
1 T. snipped fresh dill or 1/2 tsp. dried dill
2 cloves garlic, minced
1/8 tsp. pepper

4. In a large bowl, combine shrimp, pasta, spinach, cheese, olives & dressing. Toss to coat; cover & refrigerate for 1 to 24 hours.
5. Add quartered cherry tomatoes before serving.
