Salmon & Herb Penne

This salmon & herb penne is a light & satisfying meal.

We have substituted tuna fillet for the salmon, and it tastes great.

We have to double this to serve my family (5 people, right now).
Add crusty bread, and a salad for a complete meal.

4 oz. penne; or as much as your family eats.
1/4 cup olive oil
1 cup grape tomatoes, halved. I use 1 can of diced tomatoes.
5 cloves garlic, minced
1/2 cup white wine
3/4 lb. boneless, skinless wild salmon fillet, cut into bite size pieces.
2 T. chopped fresh basil or if using dry; less
1 T. chopped fresh oregano or if using dry; less
1 T. capers, (or more) rinsed & drained

1. Prepare pasta per package directions.
2. Heat oil in large skillet over medium-high heat. Add tomatoes and garlic and cook 1 to 2 minutes.
3. Increase heat to high and add salmon, wine, basil and oregano. Cook until salmon is just opaque, about 4 minutes.
4. Drain pasta and add to skillet. Toss with tomatoes & salmon to combine.
5. Add capers.
