I've adapted this rigatoni recipe to be easier than its original version. Perfect for a quick & easy dinner during the week, and tasty too.
Makes 8 - 1 cup servings.
4 cups of your favorite jarred spaghetti sauce. 1 lb. lean ground beef; browned, lightly salted and drained. Use turkey sausage, ground turkey or chicken if you like -- that's what my family prefers. 4 cups cooked rigatoni or penne pasta, this is about 2 1/2 cups uncooked pasta. 1 1/2 cups + 1/2 cup grated mozzarella cheese. 1/4 cup freshly grated or powdered Parmesan cheese. Salt & pepper if needed, or even some red pepper flakes add a nice kick.
1. Brown ground meat, drain fat & season with salt & pepper if needed. Add red pepper flakes if you like it spicy. 2. Cook pasta, drain. 3. Combine all ingredients; spaghetti sauce, cooked ground meat, cooked pasta, 1 and 1/2 cups grated mozzarella cheese. Save other 1/2 cup of cheese for topping. 4. Add a little more sauce if it seems dry. 5. Spray an 11 x 9 inch baking dish with cooking spray. 6. Place in baking dish, and top with 1/2 cup mozzarella cheese and Parmesan cheese. 7. Bake at 350 degrees for 20 minutes or until heated through.
You may need to adjust this based on the appetites of your family -- meaning, this may not serve 8 for every family.
Add crusty bread and a packaged salad. Or your favorite bag of veggies -- baby carrots, cauliflower or broccoli and you are set with an easy weekday meal.
