Ranch Chicken Recipe

This Ranch Chicken Recipe is so easy with only 4 ingredients.

Kids & adults love ranch flavoring, so it's a winner for all.
I found this recipe from allrecipes.com contributed by "Suzynagy,"
but I adapted it to accommodate a family, and reduced the oil to make it healthier too.

You can marinate the chicken overnight, so it would be great for a make ahead meal. Hope you like it!

Serve it with rice pilaf, buttered noodles or baked potatoes slathered in ranch dressing, and raw or steamed veggies.
Perfect weekday meal :)

Serves 4
6 boneless, skinless chicken breast halves
2 pkgs. dry Ranch dressing mix
3 - 4 T. olive oil
2 T. red wine vinegar

1. Whisk together the dry dressing mix, olive oil & red wine vinegar until blended. Place chicken pieces & marinade in resealable plastic bag; seal & rub marinade into chicken to coat.
2. Refrigerate for at least an hour or overnight.
3. Preheat broiler; broil chicken for 10 - 15 minutes (total) or until cooked through; turning when necessary. Be sure not to over cook.

You could saute them in a shallow fry pan too, or cook on the grill. The grill would add a nice char-flavor to them.

Dip chicken pieces in ranch dressing for extra goodness.
