Potato Soup Recipe

This delicious no fuss potato soup recipe is from my Aunt Joan.
She always makes the tastiest dishes -- it will
warm you up with yummy goodness on a cold night.



6 cups cubed & peeled potatoes
5 cups water
2 cups chopped onion, you can add less based on your family's tastes.
1/2 cup chopped celery
1/2 cup grated carrot
1/4 cup butter
4 tsp. chicken bouillon granules
2 tsp. salt
1/4 tsp. pepper
1 can (12 oz.) evaporated milk
3 T. chopped fresh parsley
Snipped chives, optional

1. In a large stock pot, combine the 1st nine ingredients. Cover & cook on medium high until veggies are tender -- about 1 or so hours.
2. Add milk & parsley; mix well.
3. Cover & simmer 30 - 60 minutes longer.
4. Garnish with chives if desired.

Makes about 3 quarts
