Polish Kielbasa Soup

This yummy polish kielbasa soup is smoky tasting and soothing.

I love any reason to use kielbasa & now you can get the turkey version for a lighter mix. How cool is that?! :)

This recipe is super-duper easy; you can whip it together after work
in no time.

1 Polish Kielbasa sausage, cut into 1/2 inch slices; remove any non-edible casing.
Cut them at a slant for a classy look.
1 can (15 oz.) diced tomatoes, do not drain.
1 can of water mixed with chicken bouillon cube.
Small onion, chopped; use the food processor if you have those who don't like chunky onions.
1 or 2 garlic cloves, minced
Olive oil
1 or 2 small potatoes, peeled and cut into cubes.
15 oz. can drained and rinsed black beans -- or any canned beans you have handy.

1. Heat a small amount of olive oil in stock pot; saute garlic and onion until tender and slightly brown.
2. Add sliced Polish Kielbasa; cook until edges are browned.
3. Add canned tomatoes, chicken broth, potatoes and can of beans.
4. Bring to a boil, reduce heat and simmer until potatoes are tender -- about 30 minutes.

Add some more chicken broth or another can of tomatoes if you feel the soup needs more liquid.

Serve this with crusty bread or grilled cheese. YUMMY!
