Oatmeal Recipe

I received this baked oatmeal recipe from my son-in-law's mother,
but I'm not sure if it originated with her.

It's a comforting and tasty breakfast.
See all that oat-y goodness in the picture. Bring it on!

You can assemble this the night before, and bake in the morning quickly.

1/2 cup oil
1 cup brown sugar
2 eggs
3 cups oatmeal (instant)
2 tsp. baking powder
1/2 tsp. salt (scant)
1 cup milk

Mix together and pour into greased 9 x 13 inch baking dish.
Bake at 425 degrees for 20 - 30 minutes. Keep a close eye on it the first time you cook this to gauge your oven heat.

Some prefer this served alone, or place in a dish with milk like cereal.
I love it in a bowl doused with vanilla soy milk. Yum :)
