This recipe makes about 24 cookies. You won't be able to eat just one!
3/4 cup all-purpose flour 1/2 tsp. baking soda 1/4 tsp. salt 1/2 cup butter (1 stick), softened -- be sure to leave your butter out of the refrigerator to soften, instead of melting in the microwave. Fully melted butter makes cookies spread terribly. 1/2 cup white sugar 1/3 cup packed brown sugar 1 large egg 2 tsps. vanilla extract 1 1/2 cups quick-cooking oats, uncooked 3/4 cup seedless raisins
1. Preheat oven to 350 degrees. 2. In a small bowl, sift flour, baking soda, and salt together. 3. In a large bowl, with hand-held mixer or stand mixer; beat softened butter, white and brown sugars together until light and fluffy. Beat in egg and vanilla until well blended. 4. Add flour mixture to sugar mixture and combine until blended. 5. Stir in oats and raisins. 6. Drop by spoonfuls onto ungreased cookie sheet placing cookies 2 inches apart. Bake until golden brown, about 10 - 15 minutes. 7. Place on wire rack to cool completely. Enjoy with a cold glass of milk!
