Lemon Bars

Print This Page

These lemon bars have a melt-in-your-mouth crust; simply delicious!
And I'm not a lemon fan, but I love these bars.
They have an intense, fresh flavor.

1 cup flour
1/2 cup butter
1/4 cup powdered sugar

Mix the above as a crust & pat into a 9-inch baking pan. Bake for 12 - 15 minutes in a 350 degree oven.

Mix together:
2 eggs, beaten
3 T. lemon juice
3 T. flour
1/2 tsp. baking powder
1 cup white sugar

Pour the above mixture over crust.
Bake an additional 25 minutes in a 350 degree oven.
Cool.
Sprinkle lightly with powdered sugar.
