Lasagna Roll Ups

These lasagna roll ups are company good.
I almost like them as much as my best lasagna recipe.
That is saying a lot, because my lasagna is out-of-this-world delish!

Serve this with french bread & a green salad, and you are set to go.
Assemble ahead, refrigerate, and bake it when you're ready; super simple that way. Enjoy!

This recipe came from a Simple & Delicious magazine contributed by Susan S. from Windsor, CA.
It serves 5 people, 2 lasagna rolls each, or 10 people with only one roll up. We have found a person can eat more than just one! :)

Lasagna Roll Ups Recipe:
10 lasagna noodles
1 pkg. (19 oz.) Italian turkey sausage, casings removed. I use ground chicken or ground pork, browned & seasoned with salt, pepper & Italian seasoning. Tastes just like sausage.
1 pkg. (8 oz.) cream cheese, softened
1 jar (26 oz.) or more, spaghetti sauce.
1 3/4 cup (7 oz.) or more, shredded cheddar cheese, and/or mozzarella.

1. Cook noodles per package directions. Drain.
2. In a large skillet, brown the sausage or ground meat; drain. Stir in cream cheese and 2/3 cup spaghetti sauce. Add enough sauce so it's not dry.
3. Spread 2/3 cup spaghetti sauce, or enough to cover bottom, into ungreased 9 x 13 inch baking dish.
4. Lay drained noodles out on counter or cutting board to work, so you can fill them assembly line fashion. Dry noodle tops a bit, so it's easier to spread topping.
5. Spread 1/3 cup meat mixture over each noodle; sprinkle with about 2 T. cheese; roll up carefully.
6. Place roll ups seam side down over sauce in baking dish. Top with remaining sauce & cheese. Add as much sauce as you feel necessary to cover the roll ups; we like it covered generously.
7. Cover & bake for 20 minutes at 350 degrees. Uncover and bake 10 - 15 minutes longer until bubbly.
