Ingredient Substitutions for Cooking & Baking

We all find ourselves needing ingredient substitutions some of the time. We're out of brown sugar! We don't have buttermilk! Not to worry; these useful ingredient substitutions should meet your need & keep you cooking & baking for a long time. :)
Apple pie spice, 1 teaspoon = 1/2 teaspoon ground cinnamon plus 1/4 teaspoon ground nutmeg, 1/8 teaspoon ground allspice, and dash ground cloves or ginger
Baking powder, 1 teaspoon = 1/2 teaspoon cream of tartar plus 1/4 teaspoon baking soda
Broth, beef or chicken, 1 cup = 1 teaspoon or 1 cube instant beef or chicken bouillon plus 1 cup hot water
Brown sugar, 1 cup = 1 cup white sugar plus 2 Tablespoons molasses
Buttermilk, 1 cup = 1 Tablespoon white vinegar added to 1 cup regular milk (let stand 10 minutes before using).
Cajun spice, 1 Tablespoon = 1/2 teaspoon white pepper, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/2 teaspoon ground red pepper, 1/2 teaspoon paprika, and 1/2 teaspoon black pepper
Cake flour, 1 cup = 7/8 cup all-purpose flour plus 1//8 cup cornstarch
Cornstarch, 1 Tablespoon = 2 Tablespoons all-purpose flour or 2 teaspoons quick-cooking tapioca
Corn syrup, 1 cup = 1 cup granulated sugar plus 1/4 cup water
Catsup, 1 cup = 1 cup tomato sauce plus 1/2 cup sugar and 2 Tablespoons vinegar (for use in cooking)
Chili sauce = 1 cup catsup plus 1 to 2 teaspoons horseradish
Egg, 1 whole = 2 egg whites; 2 egg yolks or 1/4 cup thawed egg product
Flour, self-rising, 1 cup = 1 cup all-purpose flour plus 1 teaspoon baking powder, 1/2 teaspoon salt, and 1/4 teaspoon baking soda
Garlic, 1 clove = 1/2 teaspoon bottled minced garlic or 1/8 teaspoon garlic powder
Gingerroot, grated, 1 teaspoon = 1/4 teaspoon ground ginger
Half and half or light cream, 1 cup = 1 Tablespoon melted butter or margarine plus enough whole milk to equal 1 cup
Herb, dried, 1 teaspoon = 1/2 teaspoon ground herb
Herb, fresh, 1 Tablespoon = 1/2 teaspoon to 1 teaspoon dried herb, crushed
Honey, 1 cup = 1 1/4 cups granulated sugar plus 1/4 cup water
Lemon juice, 1 teaspoon = 1/2 teaspoon vinegar
Margarine, 1 cup = 1 cup butter or 1 cup shortening plus 1/4 teaspoon salt
Milk, whole, 1 cup = 1/2 cup evaporated milk plus 1/2 cup water; or 1 cup water plus 1/3 cup nonfat dry milk powder
Molasses, 1 cup = 1 cup honey
Mustard, dry, 1 teaspoon (for cooking) = 1 Tablespoon prepared mustard
Onion, chopped, 1 small or 1/3 cup = 1 teaspoon onion powder or 1 Tablespoon dried minced onion
Poultry seasoning, 1 teaspoon = 3/4 teaspoon dried sage, crushed, plus 1/4 teaspoon dried thyme or marjoram, crushed
Pumpkin pie spice, 1 teaspoon = 1/2 teaspoon ground cinnamon plus 1/4 teaspoon ground ginger, 1/4 teaspoon ground allspice, and 1/8 teaspoon ground nutmeg
Powdered sugar, 1 cup = 1 cup granulated sugar plus 1 teaspoon cornstarch
Sour cream, dairy, 1 cup = 1 cup plain yogurt
Sour milk, 1 cup = 1 Tablespoon lemon juice or white vinegar plus milk to make 1 cup (let stand 5 minutes)
Sugar, granulated, 1 cup = 1 cup packed brown sugar, or 2 cups sifted powdered sugar
Tomato juice, 1 cup = 1/2 cup tomato sauce plus 1/2 cup water
Tomato sauce, 2 cups = 3/4 cup tomato paste plus 1 cup water
Yeast, active dry, 1 package = 1 cake compressed yeast or 2 1/4 teaspoons instant yeast
