How to Roast Peppers

Learning how to roast peppers can save you oodles of money.
Homemade roasted peppers are deliciously fresh & so much less expensive than the jarred version.

They can be roasted very easily in your own oven.
Roasted and marinated red peppers are great in sandwiches, salads and main course meals.

I got this recipe out of one of my favorite cookbooks,
"How to Cook Everything" by Mark Bittman.



Basic recipe for "How to roast peppers" & marinade:

4 red bell peppers, rinsed
1/4 cup extra virgin olive oil
1 clove garlic, crushed
Salt and coarse ground pepper to taste
Minced fresh basil, oregano, or parsley leaves for garnish

1. Preheat oven to 500 degrees.
Place the peppers in a roasting pan and place in the oven, on a top rack.
While the peppers roast, shake the pan frequently. After about 30 - 40 minutes, they will shrivel and collapse.
They may blacken a bit too, which makes a nice strong flavor.

2. Place the hot roasted peppers in a bowl and cover with plastic wrap.
Cool and then peel; throwing the skins, seeds, and stems.

3. Combine oil, garlic, salt and pepper and marinate the peppers in this mixture, from 1 to 24 hours.

Serve at room temperature.
Garnish with minced herb of your choosing.

You can also put this roasted pepper mixture in a glass jar
and store in the refrigerator.
They would make a nice Christmas gift for neighbors & friends :)
