Biscuits are comfort food at its best! Yet, sometimes we feel uncertain how to make biscuits from scratch to create that flaky, hearty goodness.
This biscuit recipe is my all-time, never-fail, go-to recipe. Being in the "recipe industry" so to speak, I test a lot of recipes & I have not found another biscuit recipe I prefer more. I even have a cookbook devoted solely to biscuits & this one tops them all. This recipe can also be found under my Best Recipes #1,

On this page, I hope to explain the procedure to make perfect biscuits every time :) My daughter, Anna, & I can eat a batch ourselves. Yummy goodness! This recipe makes 10 - 12 delicious biscuits.

1 1/2 cups all-purpose flour 1/2 cup whole wheat flour 2 T. sugar 1 T. baking powder 1/2 tsp. cream of tartar 1/2 tsp. salt 1/2 cup shortening; use the semi-hard vegetable shortening like Crisco. 1 egg 1/2 cup milk
How to Make Biscuits: 1. In a medium mixing bowl, combine the flours, sugar, baking powder, cream of tartar & salt. 2. Cut the shortening into the dry ingredients using a pastry blender/cutter or 2 forks. It will seem very globby at first, but wipe the globs off the pastry cutter & keep incorporating. Continue until the mixture resembles coarse crumbs.

3. Combine egg & milk in a separate bowl; make a well in the dry ingredients & pour milk mixture into the well.

4. Stir mixture until the dough just starts to stay together.

5. Turn dough onto a floured surface. Knead together about 10 - 12 strokes to be sure all ingredients are incorporated. Roll or pat to 1/2 inch thickness; I like to roll my biscuits. Isn't that just a pretty sight? I love making homemade breads; so beautiful! :)

6. Cut with a 2-1/2 inch biscuit cutter, dipping cutter in flour if needed, so not to stick. After you have cut some biscuits, you will need to re-roll dough until all dough is used.

7. Transfer to a greased baking sheet & bake for 15 to 18 minutes in a 375 degree oven. Watch them the first time to gauge your oven's heat; I've cooked mine for as little as 13 minutes.
