Healthy Banana Bread

Wow! This Healthy Banana Bread is tops. So moist & flavorful.

I felt pretty confident I had the best banana bread recipe with my old stand-by, and it is good. Best Banana Bread

But, this healthy version is in serious contention for the #1 spot.
It's a winner! It will become your go-to recipe for yummy banana goodness.

This recipe makes 1-9x5 inch loaf.
3/4 cup all-purpose flour
3/4 cup whole wheat flour
1/4 cup flaxseed meal
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. baking soda
1 cup mashed ripe bananas
1/2 cup walnuts, chopped
3/4 cup sugar
1/2 cup plain low-fat yogurt
1/4 cup canola oil
Cooking spray

You're seeing right; no eggs in this recipe. :)

1. Preheat oven to 325 degrees.
2. Whisk together flours & next 4 ingredients (through baking soda) in a large bowl.
3. In a small bowl, combine mashed bananas & next 4 ingredients (through oil).
4. Add banana mixture to dry ingredients; stirring until just moist.
5. Pour batter into 9x5 inch loaf pan coated with cooking spray. Bake for 1 hour & 15 minutes or until a wooden toothpick comes out clean. Cool for 10 minutes in pan on wire rack.

Side note: My banana bread is usually done in 1 hour, so check the first time you make this, so not to overcook.

My new favorite baking tools are silicone products.
No more rusty pans, which were suppose to be non-stick.
Take a look. Can stand heat to 500 degrees.
