Greek Chicken Recipe

This Baked Greek Chicken Recipe is both delicious & easy!!

I actually got the ingredient list and rough directions from "Diners,
Drive-in's and Dives" -- my all-time favorite Food Network show :)

This baked greek chicken is so moist; we found ourselves savoring its goodness with each bite.

Enjoy & thank you Guy Fieri & the Greek diner that made it!


Ingredients:
*Chicken pieces with bone-in & skin on -- I used legs with thigh & breast pieces. Get enough to feed your family, of course :)
*Extra virgin olive oil
*Garlic powder
*Salt & coarse black pepper
*Oregano
*Butter -- about 1/2 cup cut into cubes
*Water & white wine

1. Leave the skin on your chicken pieces.
Place in large roasting pan & rub on top of skin & under skin with a generous amount of extra virgin olive oil & the seasonings (garlic powder, salt & pepper, oregano). You can remove the skin after baking if you're concerned about extra fat, but it adds great flavor & moisture to the baking.

2. Divide butter up into cubes -- about 4 or 6 cubes & place throughout pan.

3. Add enough water & white wine to cover about 1/4 to 1/2 of pan depth.
The water/wine combo can be 1/2 water to 1/2 wine; or 1/4 wine to 3/4 water -- you will have to gauge based on your tastes. I went with about 1/3 wine to 2/3 water. Fill pan with liquid to about 1/4 to 1/2 depth of pan.

4. Bake uncovered for about 45 minutes in a 350 degree oven.

Prepare yourself for the most savory, moist chicken of all time!
Oh my!


I made a delicious gravy with some of the liquid that remained after cooking.
You will want to save a lot of the liquid for dipping the chicken in, but you can take some to make gravy for your gravy lovers.
Again, Oh my! Yummy goodness!

The chicken doesn't need gravy, because it's so moist, but I served this with mashed potatoes, and gravy is good for that :)
