Granola Recipe

We use this delicious granola recipe every week.
It is a staple in our house.
It's so soft & yummy; but, has crunch too.
A great gift idea tied up pretty in a mason jar.
This came from a vegetarian cookbook that I had a long time ago.


2 cups uncooked rolled oats (not instant)
1 cup slivered almonds
1 cup toasted wheat germ
1/2 cup shredded coconut; I use freshly grated coconut because it's easy to get in the Philippines.
1 tsp. salt
1 14 oz. can sweetened condensed skim milk
2 T. canola oil
1 cup raisins, optional
1 cup dried cherries, optional

You really can add any dried fruit that you prefer. We use only dried mango, which is easy for me to get in the Philippines. Except for in this picture -- we added dried cranberries. :)
I think dried blueberries and/or apricots would taste great too.

You can also add 1/4 cup of whole or ground flaxseed; the recipe doesn't call for it, but would boost the health value.

1. Preheat oven to 300 degrees.
2. Spray a large shallow roasting pan with nonstick cooking spray.
3. In a large bowl, combine the oats, almonds, wheat germ, coconut and salt.
4. Stir in the milk and canola oil and mix well.
5. Spread in prepared pan and bake, stirring occasionally, until golden, about 50 to 60 minutes. Keep a close eye on it the last 15 minutes.
6. Let cook, add dried fruit. Store in airtight container.
