Gooey Brownies

I love chocolatey, gooey brownies. These mocha brownies have chocolate chips in them, so they serve up extra goodness in little chunks.

These are particularly good when you refrigerate them -- they turn into something similar to fudge. Delicious!

The Best Gooey Brownies: Double this recipe and use
a 9 x 13 inch pan.

Side note: I have a friend who doesn't drink coffee, and she substituted 2 tsps. of almond extract for the coffee & her husband said,
"These are the best brownies we've ever had!" So, substitute if necessary :)


2/3 cup butter
1/3 cup unsweetened cocoa powder
2 tsp. instant coffee granules
1 cup sugar
2 eggs
1 tsp. vanilla
3/4 cup all purpose flour
1/2 cup semi-sweet chocolate chips -- I use milk chocolate

1. Preheat oven to 350 degrees.
2. Grease an 8 inch square baking pan and set aside.
3. Melt butter in medium saucepan over low heat.
4. Stir in cocoa and coffee until just combined.
5. Remove from heat & stir in the sugar, eggs (one at a time), and vanilla until the mixture is smooth & glossy.
6. Stir in the flour & chocolate chips until just combined.
7. Spread the brownie batter evenly in prepared pan.
8. Bake for 25 to 30 minutes or until a wooden toothpick inserted into the center comes out with small clumps of brownie sticking to it.
9. Don't over bake or your brownies won't be fudgy.
10. Cool the pan of brownies on a wire rack and then cut them into desired size.
11. Dust lightly with powdered sugar if desired. I don't do this.
