Eggs In A Basket

Print This Page

You may recognize this "Eggs in a Basket" recipe by another
name: "Cowboy Eggs," "Fox in a Hole," "Popeye Eggs," or "Elephant Eyes."

They all get the job done, and describe the same basic recipe. :)
"Toast with an egg in the middle of it." YUM!

A simple & delicious breakfast; fun too. Use a variety of cute cut-out's for the hole in the middle.

I found this recipe using my recipe software. It's the best!
Big Oven Recipe Software

6 slices bread; whole wheat or white
6 large eggs
3 T. butter or margarine

1. Lightly butter both sides of bread.
2. Use cookie cutters or tear out a hole in the center of the bread slice.
3. Heat skillet, and place bread in skillet. Crack egg & drop into the bread hole.
4. Cook until egg looks half cooked. Carefully flip bread/egg to other side; cook until egg white is cooked, but not overcooked, if you want a runny yolk.
5. You can cook bread round at the same time; or, dip it in an egg/milk/sugar & cinnamon mixture for a small piece of french toast.
6. Top bread/egg with cheese, if you like.
Enjoy this breakfast tradition. :)
