Easy Salad Recipe

We could have this easy salad recipe everyday.
Since we live in a 3rd world country, I can't always get lettuce, so I needed to come up with a salad recipe that used readily available ingredients.

For those who can get lettuce easily; you can add washed and torn lettuce to this recipe.
Even, some peppery arugula leaves. YUM!

The bonus with this salad is that all the ingredients stay very well in the refrigerator. But, don't make more than you need; leftover salad is never great.
Lettuce can go bad so quickly, so this salad can be made everyday with success.

Roma tomatoes, cut into cubes
Cucumber, peeled and cubed
Green pepper, cubed
Feta cheese, cubed
Green olives, sliced. Add black if you think green are too salty.
Add some capers if you are out of green or black olives.
Red onion, minced -- only if your family likes onions.
I like to add coarsely ground black pepper and red pepper flakes to this salad. (optional)

We let everyone pick the amount they want of the above ingredients, and mix together in their own bowl.

Top with your favorite salad dressing;
Good Seasoning Italian dressing, Ranch or olive oil and balsamic vinegar.
All excellent and tasty choices.
