Cookie Recipes

Warm cookies & cold milk fill the stomach with cozy goodness &
soothe the heart.
These cookie recipes have the potential to smooth over
even the roughest of days -- at least for a while anyway.

Who ever said cookies weren't good for you?! Someone who was
definitely not eating warm cookies & milk! :) YUM!


I used to feel as though making homemade cookies took so much time, until I spent a lot of time with my friend, Patty. She or her kids always had cookies baking & they made it look so effortless.

My sister-in-law is the same way, and her cookies are such a delicious treat!

Homemade cookies are actually easy to make, once you get in the swing of it. You just have to take the first step. :)

On a day when you have some extra time, mix up the dough and refrigerate or freeze it; then, cook on another day.

I realize this isn't an exhaustive list of cookie recipes, but I have tried to give you the recipes I have tested with great results.
I hope you like them. :)

SOME BAKING BASICS:
1. Use heavy-gauge non-stick aluminum cookie sheets, so your cookies cook evenly & don't stick.
2. Only grease the cooking sheet if the recipe calls for it; otherwise, your cookies may spread too much.
3. For evenly shaped cookies; try a small scoop.
4. If you come across a cookie recipe without instructions, follow these basic directions:
*Cream together butter & sugars; add flavoring & eggs.
*Sift together the dry ingredients.
*Combine the dry ingredients with the wet ingredients.
*Fold in any nuts or chips called for in the recipe.
*Most cookies bake for 9 - 12 minutes in a 350 degree oven.

Back to baking basics:
5. Butter tastes best in most cookie recipes; use unsalted as it allows for you to control the salt factor better. If you can't get unsalted, don't worry :) but if you can, then super!
6. Preheat your oven for 10 minutes to achieve the right baking temperature.
7. Bake cookies on the middle rack of your oven to prevent overly browned bottoms & under cooked tops.
8. Check cookies at the minimum time for doneness in order to have nice, chewy cookies. Cookies will continue to bake slightly after being removed from the oven.
9. Let most cookies stand on the cooking sheets for 1 - 2 minutes. They will continue to cook & firm up in order to remove them safely from the cookie sheet. Cool on wire rack.
