Cinnamon Biscuits

These sweet cinnamon biscuits are really more like a biscuit than a cinnamon roll -- that's what makes them so good.
They are a small and light biscuit -- really delicious.

I found this recipe at Grandma's Kitchen: Treasured Family Recipes.

Oh boy, these taste good!

2 cups sifted all-purpose flour
1 T. baking powder
1 tsp. salt
1/4 tsp. baking soda
1/4 cup vegetable oil
3/4 cup buttermilk -- if you don't have buttermilk on hand, you can always make your own by adding 1 T. vinegar to 1 cup of regular milk. Let it sit for 10 minutes before using.

8 T. (1 stick) butter, softened
3/4 cup sugar
1 tsp. cinnamon
**I also add 1/4 tsp. ground cardamom, optional

1. Combine flour, baking powder, salt and baking soda in a medium bowl and mix well.
2. Stir in vegetable oil. Add buttermilk until just blended.
3. Knead the dough on a lightly floured surface until smooth.
4. Roll dough into a 15 x 8 rectangle.
5. Preheat oven to 400 degrees.
6. Lightly grease a 9 inch round baking pan.
7. Spread butter over the dough. Combine cinnamon and sugar. Sprinkle over butter.
8. Roll up rectangle, jelly roll fashion. Pinch seam to seal.
9. Cut the roll into 1 1/2 inch slices. Arrange slices, cut side up, in baking pan.
10. Bake until lightly browned, 15 to 20 minutes.

Serve hot.
