This Chocolate Cupcake Recipe has a yummy surprise in the center -- cream cheese & chocolate chips.
Oh boy! It doesn't get any better than that. My friend, Chris, passed this great recipe on to me, because it's her husband's favorite cupcake recipe. Enjoy! The flavors are perfect for kids & adults.

This recipe makes about 20 cupcakes. Mix together: 3 cups flour 2 cups white sugar 1/2 cup cocoa 1 tsp. salt 2 tsp. baking soda
Add: 2/3 cup oil 2 cups water 2 T. plain white vinegar 2 tsp. vanilla
Lightly grease cupcake tins, and fill 2/3 full with batter above.
Then, mix together with hand-held mixer until fluffy: 1 8 oz. pkg. cream cheese 1 egg 1/3 cup white sugar 1/4 tsp. salt
Add by hand: 1 pkg. 6 oz. chocolate chips
Drop one heaping teaspoon cream cheese mixture into center of each cupcake (uncooked) in tins. Bake for 15 - 25 minutes at 350 degrees. This really depends on your oven's heat, so you will need to check for doneness & then record cooking time.
Frost when cool if desired -- we're not big frosting lovers, but here's the recipe. 1/2 cup butter, softened 1 1/2 cup powdered sugar 1 - 2 tsp. vanilla Enough milk to combine. Stir all ingredients together & frost cupcakes. You could also add a little cocoa or chocolate syrup to the frosting if you like.
