Chinese Chicken Salad Recipe

This chinese chicken salad recipe is from my dear sister-in-law,
who burned her kitchen down when making this;
so be careful when you fry the wontons! :)

5 or 6 boneless, skinless chicken breasts, cut into strips.
2 packages wontons (should be able to get these in the refrigerator section of your grocery store).
2 heads lettuce, torn into bite-sized pieces (of course, you can use pre-packaged lettuce too).
Green onion minced, as much as you like.
Cilantro, torn with stems removed.
Sesame seeds, roughly 1/4 cup, more or less to your liking. You can toast these too if you like. Place in an ungreased pan on the range until they turn a little brown -- keep stirring & be sure to watch them closely.

Dressing: I usually have to make this x 5 for our family, so adjust based on your family size.
2 T. sugar
1 t. salt
1/2 t. pepper
1/4 cup oil
3 T. vinegar

1. Cut up chicken breasts into strips, and saute on range in a little bit of oil.
Season to your liking; I use McCormick's Grill Mates Montreal Chicken. My sister-in-law likes to bake her chicken, so that's another option; then, cut up after baking.
2. Heat about 2 cups of oil, and fry wontons.
It works best to do 2 or 3 wontons at a time. You will need to turn once during frying.
The oil will get extremely hot as you go, so be careful, and don't leave the oil unattended.
Line a cookie sheet with paper towel, and drain the wontons on paper towel to remove excess oil.
Salt them just a little. Keep stacking wontons onto cookie sheet until all wontons are fried.
You can use fewer wontons if you prefer.

3. Mix dressing.
4. Add all ingredients together, except dressing; add dressing when ready to serve & enjoy!

This is a delicious & easy Chinese Chicken Salad.
Serve with crusty bread for a complete meal.
