Chicken Tortellini Soup

This Chicken Tortellini Soup recipe is from a "Once a Month Cooking" cookbook. Be sure to read all the way through to the "really easy version."
1 small onion, chopped 2 or 3 garlic cloves, minced 1 T. olive oil 1 cup cooked, diced chicken (I use canned to make this recipe easier; be sure to drain) 2 quarts chicken broth 1/2 tsp. salt -- go lighter if you need to 1 T. chopped fresh parsley or 1 tsp. dry 3 shredded carrots 1/2 cup celery, chopped Potatoes, peeled and cubed if you like (original recipe doesn't call for potatoes) 8 oz. package frozen small cheese tortellini
1. In large pot, saute chopped onion and minced garlic in olive oil until tender. 2. Add chicken, broth, salt, parsley, carrots, celery and potatoes. Cook until veggies are tender. 3. Before serving, add frozen tortellini and cook until tender.
Serve with crusty bread, grilled cheese or crackers. YUM!! Love the tortellini's.
The Super-Duper Easy Version:
Instead of cutting up all the veggies; add a bag of frozen mixed vegetables. They will not take long to cook; watch them so they don't get soggy.
So, it looks like this: Chicken broth Bag frozen mixed veggies Frozen cheese tortellini
Put it all together and cook until tender. Simple!
