Chicken Parmesan Recipe

I adapted this Chicken Parmesan recipe to exclude the breading,
which seemed heavy.
A delicious & easy dinner recipe for a hectic weeknight.

Serves 4 or 5.

6 boneless, skinless chicken breasts, pounded into submission.
1 T. olive oil
1 - 2 cloves garlic, minced
1 jar spaghetti sauce or your favorite homemade sauce
Grated mozzarella cheese, about 2 cups
3 T. grated Parmesan cheese
Cooked pasta

1. Place chicken pieces between wax paper and pound with a rolling pin or mallet to about 1/4 inch thickness.
2. In a pan, heat olive oil and saute garlic.
3. Add pounded chicken pieces to pan and lightly brown on both sides.
4. Pour a layer of spaghetti sauce in 8 inch square baking dish.
5. Place chicken pieces on layer of spaghetti sauce; top with more sauce and grated cheeses. Add some red pepper flakes if you like it spicy.
6. Bake at 350 degrees for 25 minutes or until bubbly and heated through.

Place chicken pieces on cooked pasta.
Heat additional spaghetti sauce if needed when serving.
