This easy chicken divan recipe is perfect for the weekday hustle. Easy & delicious -- creamy goodness!
My whole family loves it. I'm confident yours will too. This recipe came from my friend, Cindy.
1 - 1.5 lbs of chicken breast, cooked. Or use canned, drained. 1 bunch fresh broccoli; can use frozen. 1/2 - 1 cup sour cream 2 cups cream of celery soup -- or whatever "cream of" you have on hand. 1 cup mayonnaise 1/2 tsp. curry powder 1 cup grated cheese; buy already grated for ease.
1. Boil chicken for about 10 minutes; cube & season with salt & pepper. You could cook the chicken on the weekend, and then use recipe early in the week. 2. Blanch broccoli; if you use frozen; I would just place in strainer & rinse with water until thaw; squeeze off excess water. If using fresh, blanch means to add broccoli to boiling water; cook for a few minutes; drain & immerse in water with ice cubes to stop cooking.
3. Mix sour cream, soup, mayonnaise, curry & cheese. 4. Layer cooked chicken on bottom of 9x13 inch baking dish; top with broccoli & cream mixture. 5. Bake for 30 minutes at 350 degrees.
Serve with crusty french bread or refrigerator biscuits.
