Chicken Alfredo Pizza

This Chicken Alfredo Pizza tastes like it came straight from a restaurant. It's so delicious!

We are partial to homemade crust, and you can get my recipe at the link. Homemade Pizza Crust

The recipe calls for a pre-baked pizza crust, like Boboli.
Another great alternative would be to use Rhode's frozen bread dough, or stop and get ready-made pizza dough at Papa Murphy's.

This pizza is savory good! You can top it with anything your heart desires; that's the beauty of pizza.

I've used pesto as a sauce too, as you can see in the picture; but, our preference is Alfredo sauce. YUM!

This recipe came from a Simple & Delicious magazine, and makes
one 12 inch pizza.

1 envelope zesty herb marinade mix; I use McCormick's Grill Mates Zesty Herb Marinade.
1/3 cup water
3 T. cider vinegar
3 T. olive oil
2 boneless, skinless chicken breast halves (4 oz. each)
1/2 cup, or more, prepared Alfredo sauce
3 T. grated Parmesan Cheese
3 tsp. Italian seasoning
1 tsp. garlic powder
Little side note: I lightly sprinkle the zesty herb mix onto the Alfredo sauce & incorporate it into my sauce with a spatula. I do this instead of the Italian seasoning & garlic powder. I like the Alfredo sauce to have a little bit more zip. Do as you see fit :)

1 cup pizza cheese blend or mozzarella, shredded
1/2 medium green pepper, sliced thin
1/2 small red onion, sliced thin & separated into rings.
1/2 cup mushrooms, sliced. We can't get fresh mushrooms here, so always use canned. If using fresh, you may want to saute them first in a little butter or olive oil to get some of the water out of the mushrooms.

Any other toppings you enjoy; we like black olives.
Some options: Feta cheese, toasted pine nuts, thinly sliced tomatoes, or capers. Yummy.

1 pre-baked Italian pizza crust.

Making the marinade:
1. In a small bowl, combine 2 Tablespoons of the dry marinade mix, water, vinegar & oil.
2. Cut chicken into equal portions; I like them medium-sized for baking, so they don't dry out. Pour 1/3 cup of marinade into a large resealable bag; add chicken. Seal & rub marinade into chicken pieces. Refrigerate for 1 hour. Save remaining marinade for basting while cooking chicken.

Additional Instructions for Chicken Alfredo Pizza:
1. Chop vegetables & shred cheese while chicken is marinating.
2. After 1 hour, remove chicken & discard marinade. Broil chicken 4 inches from heating element for 5 - 7 minutes on each side, or until done; basting with remaining marinade. Cool slightly. Cut into small cubes or pieces.
3. Spread Alfredo sauce on pizza crust; sprinkle with Parmesan cheese, Italian seasoning & garlic powder.
4. Top with chicken, green pepper, onion, mushrooms, & cheese.
5. Transfer to lightly greased pizza pan or stone.
6. Bake for 8 - 10 minutes in a 450 degree oven.
