You can't go wrong with this fresh tasting chef salad recipe for 2 with a creamy pesto dressing. Oh my!
Mix the dressing, chop the veggies, Whala, done! Couldn't be easier. Add crusty bread or delicate biscuits to complete the meal.
Salad Ingredients: 3 cups mixed greens, torn 1/2 cup (2 oz.) mozzarella or provolone cheese, cubed or sliced into julienne strips. 2 oz. cooked ham or turkey, cubed or sliced into julienne strips. 1 oz. salami, cubed or sliced into julienne strips. 1 small tomato, cut into thin wedges. Small red onion, sliced and separated into rings. Small green or yellow pepper, sliced into rings. 1/2 of a 6 oz. jar marinated artichoke hearts, drained and halved.
Creamy Pesto Dressing: 3 T. mayonnaise 2 T. sour cream or plain yogurt 1 T. grated Parmesan cheese 1 T. prepared pesto from a jar 1 clove garlic, minced 1 to 2 T. milk
1. In a small bowl, whisk together dressing ingredients, except the milk. Add 1 T. of milk at a time to get desired consistency.
2. Place greens on two plates; top with meat and vegetables. Top with dressing.
