Calzone Recipe

This calzone recipe uses refrigerator pizza crust,
so it can be whipped up in a snap.

Serves 4.
Tailor to suit your family's tastes.

10 oz. tube refrigerator pizza crust
1 cup mozzarella cheese, grated
3 1/2 oz. pepperoni -- I use Hormel turkey pepperoni for a lighter version; just as tasty.
1 cup ricotta cheese
1 cup green bell pepper, diced fine.
1 cup onion, diced fine. Use green onion for a softer onion taste.

1. In a small pan, melt some butter & saute the onion and green pepper together.
2. Unroll pizza crust on a greased baking sheet; stretch to a 12 inch square. Cut into quarters.
3. On each quarter, sprinkle on half of square -- 2 T. cheese, pepperoni, 1/4 cup ricotta, additional 2 T. cheese and 1/4 cup pepper/onion mix.
4. Lift side over toppings and seal edges.
5. Bake for 10 - 15 minutes at 425 degree oven.
