Buttermilk Bars

Growing up, my mom made these delicious buttermilk bars every weekend. They were my favorite :) She sent them with my dad for his lunches, and my friends and I devoured the rest after school. Complete comfort food goodness.
My mom has Alzheimer's and she has declined rapidly, and I couldn't find this recipe -- I thought it was lost forever! Then, I was thumbing through an old family cookbook last night, and I found it. I was thrilled!
These bars have a nice buttery crust and moist, almost cake-like texture with a crumble topping. Delicious served warm!
2 cups flour 1 1/4 cups white sugar 1/2 cup butter
1. Mix the above as a pie crust; cutting in the butter with a pastry cutter or two forks. 2. Take out 2 cups from the mixture. Of the 2 cups, save 1/2 cup for topping & pat the remaining 1 1/2 cups in the bottom of a 9 x 13 inch pan.
To the remaining crumbs, add: 1 tsp. baking soda 1/2 tsp. salt 1 tsp. cinnamon 1 beaten egg 1 cup buttermilk (If you don't have buttermilk, you can use 1 cup of regular milk with 1 T. of vinegar added. Let it sit for 5 minutes before using).
1. Beat the above mixture together quickly & pour over crust. 2. Sprinkle the reserved 1/2 cup of crumbs over mixture. 3. Bake in 350 degree oven for 25 - 30 minutes, or less depending on your oven's heat.
