Burrito Recipe

Print This Page

A super-easy burrito recipe for a busy weeknight.
Pull this simple dinner together in minutes.

This recipe was contributed by Jennifer M. from Washington, Illinois to a Taste of Home magazine.
It makes 8 hearty servings.

1 lb. ground beef; I use ground chicken or turkey
1/4 chopped onion, or omit if your family doesn't prefer onions.
1 can (15 oz.) chili with beans
1-1/4 cups chunky salsa or your favorite salsa
1/4 cup chopped green chilies
8 flour tortillas (8 inch), warmed
Cheddar cheese, shredded
Additional taco sauce, optional
Lettuce, cilantro, olives, sour cream -- all optional toppings, but so good.

1. In a large skillet, brown ground beef or chicken with onion; drain. Stir in chili, salsa and green chilies. Bring to a boil. Reduce heat and simmer uncovered for 5 minutes.
2. Warm tortillas. Fill each tortilla with 1/2 cup beef mixture; top with cheese, lettuce, taco sauce or other optional toppings. Roll & enjoy.

You can serve this alone or with Chipotle's Cilantro Lime Rice.
