This bruschetta recipe is perfect with day old bread, because you crisp it up in the pan before topping it with vegetable goodness.
Bruschetta is one of those food items that has so much room for creativity & personal taste. That's what makes it fun!
Here's my version; which may be a little bit different the next time we make it :)
Loaf of french bread -- best if it's about 4 to 6 inches wide. A yummy bread for this is my
easy bread recipe.
Extra virgin olive oil Tomatoes, chopped Green, yellow and/or red pepper, chopped Cucumber, chopped Capers, 1 small jar Feta cheese chunks Fresh basil leaves Coarsely ground black pepper Balsamic vinegar
1. Slice french bread about 1 inch thick; grill in pan with generous amount of extra virgin olive oil. Brown both sides nicely.
2. Chop vegetables evenly; place together in bowl with capers, feta cheese, basil leaves, and black pepper.
3. Splash with balsamic vinegar to your liking -- not saturated, just lightly dressed.
4. I serve bread & vegetables separately, so the bread doesn't get soggy.
5. When ready to eat, each person can top themselves.
Some variations to this bruschetta: Green olives and/or drizzle with pesto
