Broiled Salmon Recipe

This broiled salmon recipe is easy & delicious.
Fresh ginger makes the marinade really sing,
and taste extra special.

Serving Size: 4
1 - 2 green onion, chopped fine
2 T. reduced-sodium soy sauce
1 T. rice vinegar
1 T. honey
1 tsp. fresh ginger, minced.
Side note: Fresh ginger in this recipe really makes a difference, so don't substitute powdered. Ginger bulbs are easily found in the vegetable section of your grocery store. You can freeze unused ginger easily -- leave the skin on.
1 lb. salmon fillet
1 tsp. sesame seeds, toasted

1. Whisk green onion, soy sauce, vinegar, honey & ginger in a medium bowl until honey dissolves. Place salmon fillets in resealable plastic bag; add 3 T. of sauce & rub into fillets. Refrigerate & marinate for 15 minutes.
2. Reserve the remaining sauce; set aside.
3. Toast sesame seeds in dry, small fry pan. Heat pan & stir sesame seeds until lightly browned.
4. Preheat broiler. Place marinated salmon fillets on broiler pan or baking pan coated with cooking spray; skin side down. Discard marinade that fillets were in.
5. Broil salmon 4 to 6 inches from heat source until cooked through; about 6 to 10 minutes. Drizzle with remaining sauce & garnish with toasted sesame seeds.

Serve with rice pilaf & steamed veggies.
