Cream cheese in a Blueberry Muffins Recipe -- Moist, flavorful, delectable! And, blueberries are one of the hottest "good for you" foods right now -- it's a win, win! Make these ahead for a delicious breakfast on the run; or, a special brunch.

This recipe makes about 12 muffins. 2 cups flour 1/2 tsp. salt 1/2 tsp. baking soda 2 eggs 1 cup sugar 8 oz. cream cheese, softened 1/2 cup vegetable/canola oil 1 tsp. vanilla 1 - 2 cups blueberries, frozen or fresh.
1. Preheat oven to 350 degrees. 2. If your blueberries are frozen, place in strainer; rinse to thaw & let drain while mixing batter. 3. Whisk together flour, salt and baking soda. 4. In a separate bowl, beat the eggs and sugar together. Add the cream cheese and beat until smooth. Add oil & vanilla; beat to combine. 5. Combine the dry ingredients into the wet ingredients. 6. Squeeze excess water from the blueberries; Stir blueberries into batter with a wooden spoon. 7. Fill greased muffin tins with batter, 3/4 to almost full. 8. Before baking, sprinkle each muffin with a pinch of sugar. 9. Bake for 12 minutes or until tooth pick comes out clean. Oven heat varies, so watch them the first time. 10. Cool on a wire rack.
