This blueberry muffin recipe is kissed with sugar on top. So yummy! And blueberries are so good for you. Does it matter that they are wrapped up in sugar & dough?! I don't think so :)
These muffins really are the perfect sweetness -- not too much; just right :) A perfect start to the day.


Hope you like these -- the recipe is from Gwen, my good friend and baking genius. She has never shared a recipe with me that is not over-the-top delicious.
2 cups flour 1 cup + 1 T. sugar 2 tsp. baking powder 1/2 tsp. salt 1/2 cup milk 1/2 cup butter -- melt & cooled 1 egg, lightly beaten 1 tsp. vanilla 2 cups fresh or frozen blueberries -- thaw & drain; squeeze excess water.
1. In a large bowl, stir flour, 1 cup sugar, baking powder & salt. 2. In another bowl, add milk, butter, egg & vanilla. Blend well. 3. Make a well in the dry ingredients and add milk mixture to it. Stir just to combine. 4. Mash 1/4 cup blueberries & stir in batter with a few strokes. 5. Add remaining blueberries with a spoon, not an electric mixer. 6. Put in paper muffin cups or greased muffin pan. Sprinkle with remaining sugar. 7. Bake in 400 degree oven for 20 - 25 minutes.
