Blueberry Muffin Recipe

This blueberry muffin recipe is kissed with sugar on top.
So yummy! And blueberries are so good for you.
Does it matter that they are wrapped up in sugar & dough?!
I don't think so :)

These muffins really are the perfect sweetness --
not too much; just right :)
A perfect start to the day.

Hope you like these -- the recipe is from Gwen, my good friend and baking genius. She has never shared a recipe with me that is not over-the-top delicious.

2 cups flour
1 cup + 1 T. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 cup milk
1/2 cup butter -- melt & cooled
1 egg, lightly beaten
1 tsp. vanilla
2 cups fresh or frozen blueberries -- thaw & drain; squeeze excess water.

1. In a large bowl, stir flour, 1 cup sugar, baking powder & salt.
2. In another bowl, add milk, butter, egg & vanilla. Blend well.
3. Make a well in the dry ingredients and add milk mixture to it. Stir just to combine.
4. Mash 1/4 cup blueberries & stir in batter with a few strokes.
5. Add remaining blueberries with a spoon, not an electric mixer.
6. Put in paper muffin cups or greased muffin pan. Sprinkle with remaining sugar.
7. Bake in 400 degree oven for 20 - 25 minutes.

Makes 12 muffins
