Bicol Express

Bicol Express is full of flavor and spicy goodness.
Tone it down for your young ones if necessary.

This recipe is a favorite at my kids school and a favorite Filipino recipe.
Thanks Cindy for sharing it.

Serve it over rice.

Saute:
4 cloves garlic, minced
1 onion, chopped fine
2 T. ginger, grated. Be sure to use fresh.

Add and brown:
1 lb. pork tenderloin, cut into cubes -- we used boneless, skinless chicken breast the other night, and it was divine.

Mix and add:
2 tsp. curry powder
2 cups coconut milk

Add and cook until liquid is thick (20 - 30 minutes):
4 or 5 jalapeno peppers, sliced -- less if toning it down.
1 chicken cube (bouillon cube)
