BBQ Chicken Recipe

This BBQ Chicken Recipe is a Rachel Ray family favorite,
and full-on comfort food.

Serve this with rice pilaf or plain rice & green salad for a complete meal.
Enjoy :)

2 bone-in chicken thigh & leg or chicken breast pieces
Salt & Pepper
2 tsp. poultry seasoning
3 T. olive oil
2 slices pancetta or bacon, chopped
1 small to medium red onion, chopped
2 cloves garlic, minced
4 T. balsamic vinegar
2 T. brown sugar
2 tsps. Worcestershire sauce
1 cup tomato sauce
1 cup chicken stock

1. Generously season the chicken with salt, pepper & poultry seasoning. Rub seasonings into chicken pieces.
2. Heat olive oil in skillet, and brown chicken for a few minutes on each side to a slight crust.
3. Transfer chicken to jelly roll pan with a 1 to 2 inch lip. Roast chicken in preheated 400 degree oven for 15 minutes or juices run clear.
4. While chicken is roasting, cook chopped pancetta or bacon in skillet until crisp. Add onions & garlic; cook until tender.
Add vinegar, brown sugar, Worcestershire, tomato sauce, and chicken stock. Reduce heat & simmer for 5 minutes until sauce reduces slightly.
To serve, top chicken with BBQ sauce.
