Banana Crumb Muffins! Moist banana goodness topped with brown sugar & butter; YUM! They're going on the menu in my pseudo-restaurant :) They'll be sitting pretty on the counter inside a beautiful glass cake plate with cover. Ahhh! It's fun to dream!
My daughter texted after tasting them, and said they were, "banging!" Now, I googled that word and it means, "to be very good," "awesome." Further down in the online slang dictionary were some more shady definitions, but we'll go with "awesome."

This recipe makes 18 - 24 muffins. This delectable goodness came from combining two recipes for banana crumb muffins.
3 cups flour 2 tsp. baking soda 2 tsp. baking powder 1/2 tsp. salt 5 bananas -- use 3 for a half recipe. 1 1/2 cups sugar 2 eggs 2/3 cup oil 2 tsp. vanilla extract
Crumb Topping: 6 T. flour 1 tsp. cinnamon 1 tsp. vanilla extract 2/3 cup packed brown sugar 2 T. butter, softened, but not melted.
1. Sift the dry ingredients together. 2. In another bowl, mash the bananas; stir in the sugar. Add the eggs, oil and vanilla extract; combine well. 3. Add the dry ingredients to the wet ingredients until just combined. 4. Fill greased muffin tins with batter, 3/4 full. 5. Mix all ingredients for crumb topping in a separate bowl; combine with fork or pastry cutter until it's a coarse meal texture. 6. Top batter with crumb topping. 7. Bake in 350 degree oven for 15 - 20 minutes. Cooking times may vary based on your ovens heat. Enjoy!
