Baked Chicken Nuggets

These baked chicken nuggets came from a great recipe community called BakeSpace. It was contributed by "bookbabe."

Anytime you bake chicken nuggets instead of frying, you up the health factor, big time.
Dip these in barbecue sauce, ranch dressing, or the honey-dijon mustard recipe included. YUM! These nuggets really have a kick to them, so you may want to tone down the cayenne if that concerns you.
4 boneless, skinless chicken breasts 2 T. olive oil 2 cloves garlic, minced 1/4 tsp. ground pepper 1 cup fine ground bread crumbs -- you can buy ready-made or make from 2 to 3 slices of french bread or whole wheat bread. 1/4 tsp. cayenne pepper 2 - 1/2 tsp. honey 2 T. dijon mustard
1. Preheat oven to 475 degrees. 2. Cut each chicken breast into 8 pieces. 3. Mix oil, garlic & pepper; place in Ziploc bag; add chicken, seal & rub marinade into chicken. Marinate for 30 minutes. 4. Combine bread crumbs and cayenne; place on plate. 5. Remove chicken pieces from bag one at a time; roll in bread crumbs, and place on large jelly roll pan. 6. Bake for 15 minutes until browned and cooked through -- you can broil for a few minutes for extra browning. 7. Combine honey & dijon mustard. Dip nuggets in honey/dijon, barbecue sauce, or ranch dressing.
