Baked Chicken Nuggets

These baked chicken nuggets came from a great recipe
community called BakeSpace.

Anytime you bake chicken nuggets instead of frying,
you up the health factor, big time.

Dip these in barbecue sauce, ranch dressing, or the honey-dijon mustard recipe included. YUM!
These nuggets really have a kick to them, so you may want to tone down the cayenne if that concerns you.

4 boneless, skinless chicken breasts
2 T. olive oil
2 cloves garlic, minced
1/4 tsp. ground pepper
1 cup fine ground bread crumbs -- you can buy ready-made or make from 2 to 3 slices of french bread or whole wheat bread.
1/4 tsp. cayenne pepper
2 - 1/2 tsp. honey
2 T. dijon mustard

1. Preheat oven to 475 degrees.
2. Cut each chicken breast into 8 pieces.
3. Mix oil, garlic & pepper; place in Ziploc bag; add chicken, seal & rub marinade into chicken. Marinate for 30 minutes.
4. Combine bread crumbs and cayenne; place on plate.
5. Remove chicken pieces from bag one at a time; roll in bread crumbs, and place on large jelly roll pan.
6. Bake for 15 minutes until browned and cooked through -- you can broil for a few minutes for extra browning.
7. Combine honey & dijon mustard. Dip nuggets in honey/dijon, barbecue sauce, or ranch dressing.
