How to Make Bagels

This bagel recipe is really very easy and SO delicious.
When making bread from scratch, you're hard pressed to call it "easy,"
but this recipe proves that theory wrong.
My first attempt delivered a chewy, yet crunchy bagel. :)

Oh my! Talk about yummy!

I found this recipe online from a guy, John D. Lee, who owned a bagel restaurant for years; so, this recipe most likely has risen to the top of his experience.

Homemade bagel recipe: Makes 8 bagels
4 cups bread flour; a friend used half whole wheat flour,
and her family loved them.
1 Tablespoons sugar
1 1/2 tsps. salt
1 Tablespoon vegetable oil
2 tsps. instant yeast
1-1/4 to 1-1/2 cups of warm water (105 - 110 degrees)

1. Mix all the ingredients in a bowl. No need to soak the yeast when using instant yeast. The dough will feel stiff, but add the extra water if it's really stiff, so you can incorporate all the flour.

2. Place the dough down on the counter, and knead for about ten minutes, or until the dough is uniform and smooth. It's so pretty. :)

3. Cut the dough into 8 equal sized balls, and let rest for 10-20 minutes.

4. Preheat your oven to 425 degrees. (You will bake them after boiling). Grease a large baking tray lightly.

5. Take the dough balls and with your fingers, create a hole in the center; spreading it to about 2 1/2 inches in diameter. Try to keep the rest of the dough even, so you don't have lopsided bagels :)

6. Let your bagels rest on the counter for about 20 minutes, and meanwhile, bring a pot of water to a boil.

7. After the 20 minute wait, your bagels will start to look puffy
(they look so beautiful :) and it's time to start boiling them!
Add bagels to the boiling water as many at a time as you can without crowding.
Boil for a minute, use tongs & turn over; boil for another minute.
I watch the clock closely during this phase.
Take them out and let dry for a minute and then place them on your oiled baking tray. Repeat until all the bagels are boiled.

8. Place the tray in preheated oven, and after 10 minutes, turn the bagels over. Bake for another ten minutes; and they're done!

Let them cool for at least 20 minutes. Eat them fresh with cream cheese -- so chewy & delicious.

If you want toppings on your bagel; the right time to add it is before the baking step when the bagel has come out of the water & is a little gooey. Add sesame seeds, sunflower seeds or whatever you'd like.
