Almond Biscotti Recipe

This almond biscotti recipe is perfect with your
morning cup of coffee.
Rich almond flavor; chewy, yet the perfect crunch.
They seriously could be sold in a coffee shop.
So soothing!

almond biscotti recipe



1 cup blanched whole almonds, toasted and chopped coarsely
1 tsp. baking powder
1/8 tsp. salt
2 cups all-purpose flour
3/4 cup white sugar
3 large eggs
1 tsp. vanilla
1/2 tsp. almond extract

1. Preheat oven to 350 degrees. Toast almonds for 8 - 10 minutes or until lightly browned and fragrant. Cool and chop. Set aside.
2. Reduce oven to 300 degrees.
3. In small bowl, beat eggs and extracts together. Set aside.
4. Mix with electric mixer: flour, sugar, baking powder and salt. Beat until blended.
5. Gradually add egg mixture and beat until dough forms; adding almonds half way through.
6. With floured hands, divide dough in half.
7. Roll each half into a log about 10 inches long x 2 inches on floured surface.
8. Bake for 35 - 40 minutes or until firm to the touch.
9. Cool for 10 minutes.
10. Using a serrated knife, cut logs into 1/2 inch slices.
11. Arrange on lightly greased cookie sheet. Bake 10 minutes, turning slices over and baking another 10 minutes.
12. Cool and store in airtight container.
